Learning Fun Ahead!

The weekend is here!

Already I have had each class one time. They are all looking very promising!

Management - more of what I already know, but a good review.

Menus - we will create our own menu using help from the professor. Our first project is to research demographics of an area that we are already familiar with and hope to open an eatery. My partner and I are researching Honolulu. We have to also develop a menu and pretend to show all our findings to an investor (the professor). So far, so good!

Restaurant law - I have a feeling I am going to enjoy this class very much, even though it will be difficult! We only get a pass/no pass option for the class. The professor talks EXTREMELY fast; it is so hard to keep up with him! It's a small class but he chooses to use a microphone and portable speaker - old school! He is a retired lawyer and really sounds like he knows his stuff. I will have to spend a lot of time reviewing the materials until I know all the ins and outs of the laws. Interesting!

Controlling costs and purchasing - class went slow today as we did introductions and looked over a profit and loss statement. This is something I am already familiar with, thanks to my many accounting classes (I took two, twice. haha) and business classes. Compared to business calculus and statistics, I think I will really have an easier time in this class! I do not normally enjoy math, but when we are talking FOODMATH, it seems to click a lot easier with me.

Nutrition - the professor is enthusiastic and that is always a good thing! Even on the first day, a lot came back to mind from the Food Science Health Nutrition class I took early last year. I'm hoping to enjoy and take a lot of information from this class. I didn't enjoy the one I took last year because it was more from a medical perspective. This one now is totally from a culinary perspective. Yes!!

Already I have a lot of reading and some problems to work on. Thankfully the weekend is long and days are uneventful here, so I will have a great deal of time to work on everything.

Looking forward to finishing up my latest book: Someone Knows My Name by Lawrence Hill.

First Day of School


Back to school . . . means wearing business casual clothes again (really, not so bad! every school should have this dress code) . . . getting measured for new uniforms (yay!) . . . and NEW BOOKS!

Anyone else love the smell of a new book? I sure do. Well, I also enjoy the smell and feel of a really, really old book that has obviously been loved and worn well. I hope that is what happens with these books. Obviously, I found most of my books in business school to be helpful and interesting, but I never loved them the way I do now with my baking books. (I know for a fact that I burned a few math books and accounting books at a campfire.. hehe ooh colored fire!)

We received a large box o' books yesterday and I tore into them with much gusto . . . Nutrition for Foodservice and Culinary Professionals . . . Chocolates & Confections . . . BREAD: A Baker's Book of Techniques and Recipes . . . Principles of Food, Beverage, and Labor Control Costs . . . Management By Menu . . . Remarkable Service . . .  Supervision in the Hospitality Industry . . . and Gluten-Free Baking! What exciting titles! Oh, the things I will learn!!!

These next two semesters are going to be absolutely wonderful in terms of what I will be learning. From here on out, it is all specialization. We have learned the basics and techniques. We got experience out in the industry, and now we will learn the nitty-gritty on specific items. Yes!

But first, before we get in the kitchen, we have a lovely 6 weeks ahead of us of bookwork and lecture classes. I have Intro to Management, Menu Development, Controlling Costs and Purchases, Nutrition, and Restaurant Law. They all look to be good. 

Now to get a head start on that homework . . .

Bored . . . Already?!

Yes, it's true. I've been here for a mere day or so and I am bored already! 

I had quite the journey here - 2 flights, a bus, a train, and a car. Checked in, got my stuff out of the storage unit, unloaded, made a stop at Target, and then back to rearrange it all in the dorm. I'm rooming with a friend this time around. I know it is going to make a HUGE difference!  My last couple random roommates and I just coexisted together and barely spoke. I hope this year is more fun! It is nice to only have one roommate instead of two; we have a lot more space!!!

After rearranging about three times, we finally found something that worked and gave us a lot of room. We even have a small "living" room area with two butterfly chairs, a small table and a lamp. It is very cozy.

Orientation happened this morning (boring) and some more administrative activities happen tomorrow. I don't see why they can't pack it into one day so we can get started with school earlier. Oh well. 

It's a little boring but nice to have all this free time to do whatever... like take naps, put up pictures, read a book for fun... and assemble paper flowers.

Check: Photographer!

My fiancĂ© and I are very blessed to have our dear friends, the soon-to-be Mr. & Mrs. Benj Haisch as our photographers for our wedding! 

Maddie and I were roommates for a year in college and it was sooo much fun! She and Benj are getting married next week and I am so stoked for them. They are an awesome couple and Benj's photography skills are off the chain.

My Summer Is Over

I've had a nice break of about 31 days now... and already I am heading back to school. Am I excited? Slightly. 

I am super excited about school - I love having a schedule and staying organized. Also, I will be busy! That will make the time fly. However I am not looking forward to NY. I know what to expect this time around. I am praying that the fall season flies by and that it will be Christmas time before I know it!

This next segment of time in my life will be the last "long" time apart for Kaiao and I. Then it will be all downhill! I can't believe that I only have 7 months left of school and then I will finally get to move and stay in one place for a really, really long time!

I hope to update the blog more -  I was terribly lazy during my well-deserved vacation. I'm sure I will be sharing a lot more in the upcoming weeks and months about the things I will learn at school.
